INGREDIENTS
4 pcs large onions, coarsely chopped
1/4 cup (60ml) extra-virgin olive oil
3 pounds (1.5kg) leg or shoulder of lamb, cut into 6-8pcs
10 pcs cherry tomatoes
1.5 pounds (750g) potatoes, peeled and cut into 1/4 inch (5mm) slices
Salt and freshly ground black pepper as per your taste
Springs of fresh rosemary
COOKING METHOD
Saute the onion in 1 tablespoon of oil in a large frying pan over medium heat until softened, for about 5 minutes.
Add the lamb meat and brown all over, about 10 minutes
Transfer to a roasting pan. Add the tomatoes and potatoes. Season with salt and pepper and sprinkle with the rosemary.
Drizzle with the remaining 3 tablespoons of olive oil. Roast until the meat and potatoes are cooked about 50 minutes.
Serve while hot.
